It’s that time of year where we’ve enjoyed a lot of holiday goodies. December tends to be a really busy time and– for me– meal planning goes out the window a little bit. As January comes around I’m really ready for more structure. I want to find meals that are hearty for winter AND that my body feels GOOD after consuming.
Despite my kids going back to school later this week, I have had the stark realization that I will still need to feed my children breakfast every single day. This is mostly happy news because I actually do love feeding my kids- I just sometimes wish it happened considerably less often. Coming up with breakfasts that we all want to eat can get exhausting!
While my kiddos may be happy to munch on Toaster Strudels and Eggo waffles every morning– my husband and I, not so much (although let’s all admit how delicious toaster strudels are, right?). On the other hand, my kids don’t always want a veggie-packed omelet. There needs to be some common ground, here! And for our family, there is. Hallelujah!
Here are some of my family’s favorite filling breakfasts that are KID-FRIENDLY AND ADULT-FRIENDLY!*
*exact results may vary depending on personal taste preferences and dietary restrictions.
1.Build-Your-Own Oatmeal
Oatmeal is one of those breakfast items that is so classic and simple that it can easily get overlooked. But sometimes you just have to open your pantry, and find that what you’re looking for has been here the whole time.
Obviously to appease the kids you’ll want to add toppings like creamy milk, peanut butter to swirl in, bananas, berries, raisins, cinnamon, syrup, or brown sugar.
To keep the adults on board it helps to have a good quality oats (old-fashioned or steel cut are our personal favorites– no quick oats for me, please).
2. Banana (Blender) Pancakes
I make these so often that I finally just wrote the ingredients on a 3×5 notecard and taped it on the inside of my cabinet door. I’ve made a few variations of banana blender pancakes, but this recipe for Healthy Banana Oatmeal Pancakes by Ambitious Kitchen is by far our favorite. You CAN do the 3-ingredient version all over the internet, but I feel like the pancakes are much more palatable with just a few extra items added.
Something about mixing it altogether in the blender and pouring it from there as well feels so streamlined too. The less dishes to wash, the better! I love to throw some dark chocolate chips into these- I love the way the blender makes them scattered throughout each bite. Then we top them with things like: peanut butter, cinnamon, maple syrup, or even more bananas.
If you’re looking for more great banana recipes, I have a whole post on our favorites from around the internet. Banana muffins and whole wheat banana pancakes definitely fit into this Kid Tested/Parent Approved category as well.
3. Overnight Oats
A relative to our classic bowl of oatmeal- and yet somehow even easier because you mix everything the night before and wake up to softened, creamy oats. I love how customizable these are, but far and away our family’s favorite are these peanut butter oats by Minimalist Baker–I raved about them in my post about 6 Easy Make-Ahead Breakfasts.
4. Eggs, Smoothie + Toast
Another classic breakfast trio! Listen, I never promised that these would be super trendy and creative. I just promised (I mean with reservations) that you and your kids would both be equally happy to enjoy these breakfast items. And if you want more eggs than toast? And your kids ONLY want toast (not that that has ever happened in my home, of course not)…. who cares?! My kids like fried or scrambled eggs.
I love a green smoothie to boost in some nutrients to start the day, too (read this post about lots of other easy ways to pack veggies into your body this year). My kids love that they taste sweet from the banana. I realllly love THIS green smoothie from Minimalist Baker (she’s the best). Most often with smoothies though we just throw in spinach, whatever yogurt we have on hand, frozen strawberries, banana, and water to thin it out.
Doing all three of these items (smoothie, eggs, and toast) on a weekday can admittedly get time consuming, so subbing in pre-hardboiled eggs or prepping smoothie proportions ahead of time can simplify for sure.
Or REALLY simplify and just go for peanut butter or avocado toast- a few other favorites from (most) members of my family. 🙂
That’s it!
