3 Tried & True Pumpkin Recipes You Should Make This Fall

Like the rest of the universe, I enjoy all of the pumpkin treats that pop up throughout the fall season. Although my very favorite pumpkin recipes are found in my family’s cookbooks (my mom’s pumpkin pie and her pumpkin cookies with cream cheese frosting, yes please)… there are tons of amazing and link-able recipes all over the internet.

And as a year-round lover of pumpkin (it’s one of the canned goods I’d drag each trip from the States over to Korea), I’ve tried a LOT of different recipes! But there are a few that have earned the status of tried & true family favorites. AKA Even my pickiest eater will happily enjoy these foods! 1.Whole Wheat Pumpkin Pancakes by Cookie and Kate

You’ve probably already heard me mention my adoration for Cookie & Kate in my Best Banana Recipes round-up. She is the queen of healthy -yet DELICIOUS- pancakes, and her pumpkin pancakes do not disappoint. We make these year-round, not just in autumn. We double the batch when possible too, so we can always have some in our freezer for a quick on-the-way-out-the-door, toast & ready breakfast.

I know this sounds a little crazy, but I especially love them with greek yogurt on top + apple butter or maple syrup.

2. The Best Healthy Pumpkin Muffins by Erin Lives Whole

We made these again last week and I was reminded how incredible they are. And because “healthy” these days can mean any number of things, I’ll just let you in on the info: she swaps butter for coconut oil and sugar for pure maple syrup. In place of traditional flour she uses oat flour (pulverized rolled oats). The texture of the muffins is great and I found myself having less of an energy crash mid-morning– maybe due to the filling oats?

Please, please, PLEASE add chocolate chips in there. It will take an already moist and soft and hearty muffin to the next level of amazing.

3. Pumpkin Baked Oatmeal by Minimalist Baker

If you’ve read my Make-Ahead Breakfast post then you already know how I feel about the convenience of baked oatmeals. Hint: Hectic-Morning Kristen really appreciates that Night-Before Kristen whisked some ingredients together and that a filling breakfast is ready to pop into the oven for a little while and then EAT.

And this baked oatmeal is really unique and perfect for fall! You can sub out the pecans for any other nut or seed (we had pepitas on hand most recently and that felt really on brand), or omit them if you’ll be feeding kids that are pickier on texture. I think the addition of cranberry something is really imperative to this tasting great, though. I use Craisins and they add a nice acidic punch (Recipe calls for fresh or frozen cranberries… but if it’s not the day before Thanksgiving then there’s no chance in space or time of finding those in my pantry).

Oh and this recipe calls for flax seeds (read our beginner’s guide to all things flax HERE!), so don’t fret if you’ve run out of eggs in your fridge because you were too busy at the pumpkin patch to grocery shop. Party on, fall lovers!
